American Express Six Ingredients Giveaway

I have an exciting giveaway contest!! Y'all know I'm not big on give aways and rarely do them but the people at American Express talked to me about doing something and I thought it would be fun AND someone will be very happy if they win!!!

With the costs of food, gas and clothing rising rapidly, the new American Express Blue Cash® Cards provide a simple way for shoppers to put cash back in their pockets as they shop for every day necessities. With these new Blue Cash Cards, there are no spend minimums, cash back caps, ongoing enrollments or rotating categories of cash back benefits. The benefits don’t change, as they do with some other cards.

Both Cards immediately offer cash back in categories in which prices are particularly under pressure: gas, supermarket purchases and department stores.

Whether when shopping online or in-store, offers an easy-to-understand rewards structure:

For Blue Cash Preferred, it’s as simple as 6%-3%-1% (6% cash back at supermarkets, up to 3% at department stores and gas stations, and 1% on all other eligible purchases). At 6% cash back, Blue Cash Preferred offers consumers the most cash back at the supermarket available in the market today. (Blue Cash Preferred carries a $75 annual fee)

For Blue Cash Everyday, it’s a simple as 3%-2%-1% (3% cash back at supermarkets, 2% cash back at department stores and gas stations, and 1% on all other eligible purchases) with no annual fee.

SOOOOOOOOOOOOOOOO in honor of the 6% cash back on groceries..............I am going to be doing a contest looking for the best SIX INGREDIENT (or less) main dish! I'm posting my favorite 6 ingredient meal and then in the comments - I want you to leave your 6 ingredient recipe and I'm going to pick the one that sounds the very best and that person is going to win ...............a $600 American Express gift card!!!! Couldn't you use that to buy groceries? Or anything?????

This is MY favorite 6 ingredient meal:

CHICKEN BREAST SUPREME
Ingredients:
4 chicken breasts
4-8 strips of bacon
16 oz sour cream
1 can of cream of mushroom soup
1 can of sliced mushrooms
1 jar of dried beef (this is found near tuna or spam)
Wrap the chicken in bacon and put in pan
Mix up all the other ingredients. Tear up the dried beef into small pieces (this is what gives the meal the real flavor)
Pour mixture over chicken and bake at 350 for 1 1/2 hours
I always serve with white rice and pour the extra sauce on top. If we had company - we would add vegetables or a salad and rolls - but since it's just us - we just had this. TASTY!

Leave a comment with your favorite 6 ingredient main dish. Make sure you leave your email address as well!

The winner will be picked on Monday, June 6th!

Yum, that looks delicious! My 6 ingredient meal would be with: red curry paste, coconut milk, carrots, broccoli, chicken breast, rice!

Saute Chicken breast until golden brown, add carrots chopped and coconut milk. Let simmer and add red curry paste. Season with salt and pepper! Add broccoli 4-5 minutes before serving, as to not over cook. Serve over white rice!

This is a delicious curry stew you can adapt to you liking and change veggies up or add some spiciness to! Enjoy!

My favorite easy meal that is six ingredients or less is grilled chicken breasts, onions, peppers- generally use 1 pepper per pound of chicken, yep I like peppers, and 1/2 pound of onions per pound- the fourth ingredient is brown rice. Boil up the rice and in skillet brown up the peppers, onions and chicken, drain up the rice and stir into the mix right in pan..- I usually don't add anything so its healthy and not covered with gravy and sauces. I sometimes make sweet potato fries- cut up and served on the side- just broil them- no oil. It is a healthy yummy meal that all eat.

Oh, here is mine, and it is UNBEATABLE.

1 boneless pork loin (3-4 pounds)
1 jar of Mrs. Renfro's Spicy Jalapeno Salsa
1 onion
Sour cream
Corn tortillas

Put the whole pork loin in the crock pot. Pour the salsa over the top. Cook for 6-8 hours on low, then shred. Stir in about a 1/2 cup of diced onion there at the end. Spoon the mixture into corn tortillas and a little sour cream (and some manchego cheese, if you have it!) DELICIOUS.

I get lots of people worried about the hot salsa, but it really mellows out with all the cooking time. It is tangy and not spicy when its finished. We love this and it feeds us for a couple of days - and we don't get tired of the leftovers! Great party food, too.

Buy a 5-7 lb. Boston butt
Put in a crock pot with 1/2 cup white vinegar. Cook on high for 4-6 hours or low all day. I chop the meat up (like BBQ) and keep it in a container in the fridge ~ we all eat a different sauce OR you can add sauce to it all! SO good on fresh white bread! My husband LOVES BBQ and was shocked when I fixed this! :) Enjoy!!!

My 6 ingredient meal would be a take-off of Chicken Marsala.

Chicken breasts or tenderloins
butter {2-3 Tbsp.}
flour
White Cooking wine
Chicken broth
Fresh mushrooms

Cut up the chicken and brown it.
Saute your mushrooms in the butter. Add about 2 Tbsp of flour to make a rue. Quickly add a 1/4 cup of white cooking wine and 1/4 a cup of chicken broth. stir until flour is all smoothed out. It will thicken as it simmers. {sometimes I will add another 1/4 cup of broth and wine depending on if you like more sauce}
The thing I like about this meal is that you can eat it over rice, angel hair pasta or mashed potatoes! They are all good and it changes it up! Enjoy!

My favorite 6 ingredient recipe is called Spaghetti Pie...it's a family recipe.

First, cook a pound of maple glazed bacon until crispy.

2nd...start a pot of water to boil your noodles, angel hair pasta would be the best for this recipe.

after your bacon is cooked, take the grease from the bacon and saute a large white onion (chopped).

Open a large can of crushed tomatoes and put in a bowl.

now take out a pound of shredded cheddar cheese from the fridge and let it get close to room temp while your noodles are cooking.

chop up your bacon and mix it with the sauteed onions and crushed tomatoes.

once your noodles are cooked, put the drained noodles into the cheddar cheese and mix the noodles with the cheese...mixing as much as possible.

at this point, add a small amount of garlic powder to your noodles.

after your noodles are mixed, mix them with the bacon mixture and then put in a 9 X 13 pan. Sprinkle some additional shredded cheddar on top and bake at 350 for approx 30 minutes or until cheese is melted in center (the sprinkles from on top).

Serve with garlic bread and salad and you will have people BEGGING for the recipe, it's insane!!!

My fave 6 ingredient meal would have to be a casserole my hubby's grandmother makes with chicken, spaghetti noodles, Rotel, peas, mushrooms, and Velveeta. It's very simple, but I could eat a whole pan of it by myself.

You boil the chicken breast (reserve water, and toss in the noddles to cook while you shred or cut up the chicken into bite-sized pieces). Next, drain the noodles and put them in a 9 x 13 pan, add the chicken, drain the sliced mushrooms and add, drain and add a small can of peas (I use half a can, because my weird fam does not like peas), add a can of Rotel, and then cut up the Velveeta into large cubes and stir it all together. Bake at 350 for 30 - 45 min. until the cheese is melted. It's SOOOOO yummy.

My go-to, nothing in the house recipe is Migas. You need:

-Corn torillas (2 per person)
-Onions or scallions
-Pickled jalapenos
-Tomatoes (1/2 per person)
-Eggs (2 per person)
-Shredded cheese

Cut the tortillas into strips and saute them in oil until they are just soft. Add in the chopped onions/scallions and saute for a few minutes. Add the chopped pickled jalapenos and tomatoes. Then add the beaten eggs, and stir gently until the eggs are scrambled.
Top the mixture with shredded cheese, take the pan off the heat and put a cover on the pan until the cheese melts.

Serve with toast and/or sausage.

I'm a loving this! Love recipes with very few ingredients that are easy to make! Here is my favorite 6 ingredients or less recipe:
CHEESEBURGER & FRY CASSEROLE
Ingredients:
1 lb ground beef
1 medium onion
1 can cream of mushroom
1 can cheddar cheese soup
1 bag frozen french fries
shredded cheddar cheese (to taste)
Directions:
Brown the ground beef and drain.
Add onions to soften/brown just a little.
Remove from burner.
Add cans of mushroom & cheddar soup & stir together.
Add as much shredded cheddar cheese as you'd like for some extra cheesy-ness.
Spread the beef/mushroom/cheddar mixture into a baking dish.
Add frozen french fries on top.
Use french fry directions on how long to bake and at what temperature.
-to make this into a Weight Watchers recipe, you can nix the shredded cheddar cheese and make the ground beef lean and the mushroom soup fat free. It makes 6 servings and it would be 7 WW points per serving.

My favorite six ingredient meal is a London Broil crockpot meal my husband and I improvised one lazy weekend evening. It takes a 3 lb. London broil, a 32 oz. can of crushed tomatoes, a cube of beef bouillon, one diced onion, 3 cloves of garlic minced, and 2 jalapenos (remove ribs and seeds to reduce heat) minced.

Take one about 3 lb. London Broil. Brown in large skillet all sides. Add to crockpot. Briefly carmelize diced onions in skillet, adding minced garlic for 30 seconds at the end of cooking. Add onion, garlic, jalapenos, crushed tomatoes, and beef bouillon to the crockpot over the London Broil. Cook for five hours on high. When done remove the London Broil and slice. Meanwhile in a food processor or blender process the tomato sauce until the desired chunkiness is reached. Serve London Broil slices topped with tomato sauce.

Make the couscous (literally takes 5 minutes).

In a separate bowl half the tomatoes, thinly slice the sugar snap peas, zest the lemon and squeeze the juice, and add chopped fresh basil.

Layer the chicken on the couscous and add the tomato and sugar snap pea mixture on top! Enjoy

Baked Ziti

2 Cans 20 oz- Tomato Sauce (use plain or one infused with Oregano, Basil, Onion – fit your taste)
2 lbs Ground Turkey or Ground Beef
1 Cup chopped green olives
3 Cloves of Garlic chopped (or use garlic powder to taste)
2 Boxes of Ziti Noodles
2 Cups of Italian Cheese – found in your dairy section in a bag – mixed blends work well.

Preheat Oven to 350 degrees.
Put ground meat and garlic in skillet, brown on medium heat to infuse. Once browned, drain meat. Put drained meat infused with garlic back into skillet. Pour in two cans of Tomato Sauce, olives and simmer. Cook ziti noodles separately in a 5 or 6-quart pot; fill pot to ¾ full of water. Bring to boil. Once water is boiling, add the two boxes of Ziti Noodles. Cook 5 to 7 minutes, to firm not mushy. Rinse and drain pasta. Make sure all liquid is out of your 5 or 6 quart pot. Pour pasta back into 5 or 6 quart pot. Pour simmered sauce into noodles and mix well. Mix in 1 cup of grated Italian Cheese. Pour all into large casserole dish. Top with remaining 1 cup of mozzarella cheese. Bake for 45 minutes in 350 degree oven. Once done, take out of oven, let stand for 10 minutes.

This is one of those recipes that doesn't sound so good but is delicious! My aunt started making this years ago and every time we serve it, someone always leaves with the recipe!

Cranberry Catalina Chicken

4 - 8 chicken breasts
8 oz. Catalina dressing
1 can whole berry cranberry sauce
1 pck. Lipton onion soup mix

Combine all sauce ingredients and pour over chicken in a 8x8 or 9x13 pan (depending on how many pieces of chicken you use) and bake at 350 for 45 minutes. The sauce is delicious over pasta for an easy side.

The sauce is sweet but not overly so, and it's a great company dinner. If it's for company, I take the chicken out and slice it thinly, then place it over the pasta and pour sauce over all of it for a nice presentation. If it's for us, it's just a piece of chicken on a plate, but still tastes yummy! Can't wait to read all the entries.

My favorite 6 ingredient or less recipe is for Mexican Confetti Pinwheels. You need

1. 1 8 oz can refrigerated crescent dinner rolls
2. 1 can chopped chicken breast
3. 1/4 c nacho cheese dip
4. 1/3 c finely chopped red bell pepper
5. 1/3 c chopped green onions

Unroll and separate dough into 4 rectangles. Spread cheese dip onto dough leaving 1/4 inch on sides. Sprinkle with chicken, bell pepper and onions. Roll up each rectangle and cut into slices. Bake at 13-17 minutes on an ungreased cookie sheet at 350 degrees.
SO yummy!

I came across this easy recipe last week and it is so good! It uses ground beef, water, egg noodles, mushroom soup, Velveeta, and pepper. Sounds too simple to be any good, but is seriously tasty. My kids loved it.

Cheesy Beef Stroganoff:
Brown ground beef. Stir in 2 cups of water and 3 cups of eggs noodles. Cover and simmer for around 9 minutes. Finally, stir in a can of cream of mushroom soup and 8 ounces of cubed Velveeta and cook a few minutes more until the cheese melts. Add plenty of pepper to taste. Stir well. It is SO good and so easy!

Add the egg, onion, mustard and bread crumbs to the ground beef and make into 4-6 patties and brown in skillet on both sides. Add gravy that has been mixed according to packet directions and add to the burgers in the skillet and cook for about 5 minutes.

My family's favorite go to recipe when we need something quick and easy is what we call Chicken and Rotels. Not sure why that name but that's just what we've always called it.

It's super easy. All you need is
- 2 large cans of cooked chicken
- 2 cans cream of chicken soup
- 1 can cream of mushroom soup
- 1 can of rotels
- Doritos or your favorite corn chips (white or yellow)
- rice (brown or white)

Combine the canned chicken, soups, and rotels in casserole dish and mix together. Throw in a couple of big handfuls of corn chips and mix together (I like to leave some of the chips sticking out the top of the dish for crispiness). Bake at 375 for 30 minutes and serve over a bed of rice.

This looks like a big ole dish of goop but it is soooo good! Enjoy!

These six ingredients make my husband and six children happy:

Baked Spaghetti: ground beef, cooked spaghetti noodles, spaghetti sauce from a jar, cheddar cheese, mozarella cheese, parmesean cheese.

Cook 1-2# ground beef, drain, and add enough spaghetti sauce to make it sort of sloppy and heat until bubbly. Layer some coooked noodles in greased 9x13 pan then add some beef/sauce mixture. Top with 2c mozarella cheese (or more) and then 1c cheddar cheese. Repeat to make another layer of noodles, beef/sauce and cheeses then sprinkle 1 cup parmesean cheese over the top. Cover with foil and bake at 350 for 40 minutes. Uncover last 5 minutes.

This always goes fast and when I bake it for others, they always love it.

Thanks for the contest.

1 slice White American Cheese
1 slice Swiss Cheese
2 tsp Dijon Mustard
Bread Crumbs

Spread inside of pork chop with Dijon mustard

Layer one side of pork chop with ham and both slices of cheese

Secure the pork chop's closure with toothpicks

Roll closed pork chop in bread crumbs coating the outside

Pan sear both sides of pork chop & bake at 350* until cooked through

2 cups French Fried Onions
2 tbs all purpose flour
4 boneless, skinless chicken breast
1 egg, beaten

Place French Fried Onions and flour in plastic bag. Lightly crush. Pour onto plate.

Cut chicken into strips. Dip in egg and then onion crumbs. Press firmly so crumbs stick to chicken.

Place chicken on baking sheet and bake at 400 degrees for 20 minutes or until no longer pink.

Walnut and Rosemary Oven Fried Chicken

4 boneless, skinless chicken breasts (or 8 chicken tenders)
1/4 cup light buttermilk
1 tablespoon dijon mustard
1/3 cup Panko bread crumbs
1 tablespoon fresh rosemary, finely chopped
2 tablespoons walnuts, finely chopped

Preheat the oven to 350 degrees.

Mix the muttermilk and mustard, add chicken and marinate for at least 1 hour. (I usually marinate for about 2 hours)

Toast the bread crumbs in a frying pan on the stove, stirring constantly to ensure they don't burn. Place the Panko in a shallow dish or plate and mix in the rosemary and walnuts.

Dredg the chicken in the bread crumb mixture on both sides, then place the chicken breasts on a wire rack on top of a baking sheet. Bake in the oven for about 20 minutes (less or more depending on the thickness of the chicken).

We love this recipe, and it is very healthy but it still has the feel of fried chicken, yum! Can be chicken fingers for children!

You simply saute a small onion, a few cloves of garlic in a pan. Add the roasted poblano that has been diced with 1/3 cup or so heavy cream. You blend everything and pour over grilled chicken.

It's not spicy, just SO flavorful! I always serve over white rice with cilantro and black beans.

LOVE this pasta dish - cheap, quick, super tasty and vegetarian.

You need:
1 head cauliflower
1 medium red onion
5 garlic cloves
1/4 cup breadcrumbs (or 4 slices bread)
12 oz of any type of short pasta
1/2 cup grated Parmesan cheese

Cut the cauliflower into small bits. Slice red onion in half and then into thin wedges. Peel and then halve garlic cloves. Toss with olive oil and salt/pepper. Roast in a 475 oven for 20 min, tossing once.

Brown breadcrumbs in same oven, 5-6 minutes.

Cook pasta until al dente. Reserve 1/2 cup pasta water; drain pasta and return to pot.

Add cauliflower mixture, Parmesan cheese (and parsley if you have it) to pasta. Toss extra pasta water in mixture to form a thin sauce.

Serve topped with toasted breadcrumbs and more Parmesan.

It's a favorite at our house!!!!!

This one is short on ingredients and another bonus is you do it in the crockpot. Dinner is ready when you are!
Crockpot Chicken Stroganoff
*6-8 boneless skinless ck breasts (put them in frozen so your chicken won't be dry)
*16 oz sour cream
*1 can cream of mushroom soup
*1 packet Lipton French Onion dip mix
Put frozen chicken breasts in crockpot. Mix onion dip, sour cream and musroom soup. Pour over chicken and cook on low 6 hours. Chicken will shred with a fork when done. Serve over rice or egg noodles.

NOTE: to fancy this up for company, I add fresh mushroom and a jar of drained pimentos at the end.

We make balsamic chicken regularly, and it's always a hit. The vinegar gets sweet and syrupy, and the chicken stays very, very tender. It's similar to the Chicken Balsamico that was once on the menu at Johnny Carino's, but we no longer have that here in Florida so I had to figure out how to make it myself.

You need a pound (or so) of chicken breasts or tenderloins, a cup of flour, 3 tbsp of olive oil, 1/4 cup chicken broth, 3/4 cup balsamic vinegar, and a couple of cloves of minced garlic.

Season your flour with salt & pepper. Take chicken breasts or tenderloins, cut them into bite-sized chunks, and toss them in your flour. Saute the coated chicken pieces in olive oil until they're mostly cooked. Add the garlic when the chicken is just about done. Add the vinegar and chicken broth, and let it reduce until it's thick and there's very little liquid left in the pan. And that's it!

I usually serve this with some whole wheat pasta, mixed with spinach, olive oil, and chopped tomatoes. My husband usually then covers the whole thing in parmesan -- which he's right to, because that makes it even better.

2-3 russet potatoes, peeled and cubed
1 stick butter
1 packet of Italian Dressing mix (seasoning)

place chicken breasts along middle of pan (lengthways)....drain green beans and put on one side of chicken, put potato cubes on other. Melt the stick of butter and mix in Italian dressing mix into the butter and pour evenly over chicken, green beans and potatoes. Cover with foil and cook for an hour on 375, or until chicken is done and potatoes are soft. YUMMY and EASY! Takes care of the meat, and sides in one.

Stephanie said...

Here's a four to five ingredient meal for ya. :-)

http://sureisgood.wordpress.com/2010/10/30/chicken-enchilada-casserole/

Chicken Enchilada Casserole
Preheat: 350
Time: About 45 minutes – 15 minutes prep, 30 minutes bake time
Makes: I know I’ve been vague in this area in recent posts, but really, it depends on how much you want to make, how many layers you want your casserole to have, etc. This recipe is super flexible and easy to adjust in either direction.

Corn tortillas
Chicken breasts (cooked) – I used 4 large breasts
Enchilada sauce (red) – I used 3 cans and I made the dish shown plus an 8×8. Both casseroles had 2 layers.
Shredded cheese – I used a 2 cup bag and only put cheese in/on the casserole shown above, not the one I made in the 8×8. I think it needed more cheese, so next time I would buy the 4 cup bag.

Cook your chicken. I cooked mine using my roasted chicken recipe because it’s SO easy and SO flavorful. Here is another variation of chicken in the crockpot that would work well with this recipe.

After your chicken is done, shred it.

The bottom layer is corn tortillas. Dip them in the sauce – both sides! – then lay them in the dish to cover the bottom.

Sprinkle the shredded chicken on top of the corn tortillas.

Then sprinkle with cheese.

Dip some more corn tortillas in the sauce and start the layering again.

Keep on layering until you’ve used all your ingredients, but make sure you end with cheese.

Cover and bake at 350 for about 25-30 minutes.

You could also dice some onion, sautee it, and add it in between the chicken & cheese layers. Yum.

I served with a side of black beans. Pretty tasty, sooo easy, and makes a ton. Enjoy!

After noodles are cooked put in the skillet with sausage, put in fresh spinach and put lid on the skillet! Cook until spinach is wilted. After spinach is wilted, stir and add lots of feta cheese!!! I love Six Ingredients Or Less meals!! My favorite is a tortellini dish that's super easy to make. The ingredients are the following:

1 bag of frozen cheese-filled tortellini
1 large zucchini
fresh broccoli florets, maybe 2 cups
grape tomatoes, maybe a cup
Olive oil, about 2 TBS.
garlic (I use about a 1/2 a tsp of the jarred garlic)

Saute the zucchini and garlic together in the olive oil until tender. Maybe 7 to 10 minutes. Microwave the broccoli florets for a few minutes to soften them, then dump them in with the zucchini. Then add the grape tomatoes (sliced in half). Cook it all together for a couple of minutes. Just long enough to heat the tomatoes up. Then toss in the cooked tortellini, sprinkle with some basil, or your seasoning of choice, and voila!! Deliciousness in a pan. Oh, and it's really healthy too. Woot woot! We usually pair with a salad and some garlic toast. Yum!!

My favorite 6 ingredient main dish is a breakfast dish: Bacon-Cheese Pull Aparts!

Ingredients:
1 egg
2 Tablespoons milk
1 (16.3 oz.) can Pillsbury Grands Flaky Layers Refrigerated Original Biscuits
4-6 slices crispy bacon, cooked and broken into 1/2-inch pieces (or you can use 4-6 Tablespoons packaged real bacon pieces)
1 cup shredded cheddar cheese
Cooking Spray

Preparation:
Preheat oven to 350 degrees. Spray an 11×7″ or 12×8″ (2-quart) glass baking dish with cooking spray (if you don’t having either of those size pans, you could probably use a 9×13″ pan–it just may turn out a little flatter). In large bowl, beat egg and milk with wire whisk until smooth. Separate biscuit dough into 8 biscuits and cut each biscuit into quarters. Gently stir the biscuit pieces into egg mixture to coat evenly, then fold in bacon and cheese. Spoon the mixture into your sprayed baking pan and arrange biscuit pieces in a single layer. Bake 23-28 minutes or until golden brown. Serve warm by cutting into squares, or just pulling biscuits apart. Makes about 8 servings.

INGREDIENTS
2 20 ounce cans pineapple chunks
6 tablespoons of flour
1 c. sugar
2 c. grated cheese
1 sleeve crushed Ritz crackers
1/2 stick butter

Mix all ingredients-except crackers and butter, pour into a Pyrex dish, sprinkle the crackers on top and then slice the butter on top of the crackers. Cook for 30 min. at 350 and voila!

The best thing about this casserole is that it is versatile- it can be served for breakfast, dessert, or a side dish. And it is easy on the budget! :D

Add cheese dip to your liking to the cream of chicken mix! We like lots of cheese so we use most of the cheese dip. Warm in microwave 1 to 2 minutes. Crush up tortilla chips in individual bowls and pour the cheese dip mix over the chips. Stir it up and enjoy!

Yummy! My favorite 6 ingredient meal is Crescent Roll Chicken (recipe given to me by a good family friend, Tara Campbell). You get protein, veggie, dairy and a starch all in one. Kids love it too!

INGREDIENTS:
2 teaspoons olive oil
4 boneless, skinless chicken breast halves (I cut my chicken breast thin)
1 (10 ounce) can refrigerated large crescent roll dough
8 ounces swiss cheese
1 bunch fresh spinach, rinsed and stems removed
4 (1/2 ounce) slices ham

DIRECTIONS:
Heat oil in skillet. Saute chicken breasts until no longer pink, and juices run clear; set aside.
Preheat oven to 375 degrees.
Unroll 4 large crescent rolls. Layer each with slices swiss
cheese, several leaves of spinach and 1 slice of ham. Place chicken breast in the center of dough. Wrap and tuck dough around chicken until completely enclosed.
Place seam side down on baking sheet and bake for 10 to 15 minutes, or until golden brown.

Its fool proof! Enjoy.

My favorite easy meal is Picavia. It's basically a really delicious burrito.

Ingredients: hamburger meat, onions, green pepper, diced tomatos, soft taco shells, shredded cheddar cheese (cumin to taste, not sure if the spices count as an ingredient or not ;)

Cook the hamburger meat until browned. Dice half of a small yellow onion (you can add as much or as little as you like) and 1/3 of a green pepper. Add the onion and green pepper to the hamburger meat. Add a can of petite diced tomatoes and then simmer on medium heat covered for around 20-25 minutes (long enough for the tomato juice and tomatoes to cook into the mixture). As it's cooking add as much or as little cumin as you like.(Personally I think cumin is the secret touch. That sets it apart from just an ordinary burrito).

Throw the mixture onto your burrito shell with some shredded cheese and voila! Super easy!

This is my absolute favorite chicken and it just happens to be 6 ingredients or less. The ingredients kind of sound weird, but it is definitely a must try ... you won't be disappointed!

GREEN FIRE CHICKEN

Ingredients:
4 boneless, skinless chicken breasts

1/2 cup mayonnaise

3 tablespoons Green Tabasco sauce (I usually add more than this because it’s what gives it the good flavor!)

1/2 cup bread crumbs

1/4 cup grated Parmesan cheese

Directions:

Mix together mayonnaise and Tabasco sauce in one bowl.

In another bowl, mix together bread crumbs and Parmesan cheese.

Cut chicken breasts in half so they will cook faster.

Dip uncooked chicken breasts in the mayonnaise/Tabasco sauce mixture then roll in the bread crumb/Parmesan cheese mixture.

Place in baking dish in a single layer and bake uncovered at 375 degrees until done. This will take anywhere from 30 minutes to an hour, depending on the thickness of the chicken.

Enjoy!

That looks yummy! I love anything with sour cream!

This recipe is my absolute favorite dish and lucky for me, it happens to have 6 ingredients!

Cream Cheese Chicken Enchiladas

Ingredients:
2-3 chicken breasts, shredded
1 8oz. package cream cheese
1 28 oz. can green enchilada sauce
2 cups cooked white rice
tortillas
1-2 cups shredded Monterrey and Colby cheese

Instructions:

Cook chicken and shred; boil rice.

Mix the shredded chicken, cream cheese, and 2 cups of the enchilada sauce.

Pour half a cup of enchilada sauce into the bottom of a 9x13 baking dish.

Scoop some rice into each tortilla and top with chicken mixture.

Roll up each tortilla and place them in the baking dish seam side down.

Top with 1 cup of the enchilada sauce. Top with shredded cheese.

Cover the baking dish with foil and bake at 350 for 30 minutes.

Uncover the enchiladas, turn on the broiler, and broil for 3-5 minutes uncovered.

This is so delicious! My husband and I both love it. It does however make A LOT so sometimes we cut the recipe in half if it's just the two of us. You could easily make two pans with this recipe and if you do you may want to pick up an extra can of enchilada sauce. It's a great dish to take to someone who's just had a baby or needs meals for some other reason. They are great reheated!

Pistachio Chicken with Avocado Lime Sauce!

FOUR Ingredients - Chicken Breasts, Avocado, Lime, Onion (I'm not counting olive oil, S+P or water since we all have those!)

If you want to add TWO more items, I would add Wild Rice and Green Beans as sides!

Ingredients:
1/2 cup shelled pistachio nuts, finely ground
1/2 teaspoon salt
1/2 freshly ground black pepper
4 boneless, skinless chicken breast halves
2 tablespoons EVOO
1/2 cup diced sweet white onion

Avocado Lime Sauce:
1 large ripe avocado, pitted and peeled
3 tablespoons EVOO
3 tablespoons fresh lime juice
1 tablespoon water

To make chicken:
Preheat oven to 375. Mix nuts in a pie plate with 1/2 teaspoon salt and 1/2 teaspoon pepper. Press the chicken into the nuts. Heat 1 tablespoon of the oil in a skillet and cook the coated breasts, 2 minutes per side. Place the breasts in a baking dish and bake for 15 min. or until a thermometer inserted in the thickest portion registers 160 and the juices run clear.

Heat the remaining tablespoon of oil in a nonstick skillet over high heat. Add the diced onion, 1/4 teaspoon salt, and a pinch of pepper. Cook until the onion is browned.

To make the sauce:
Puree the onion, avocado, oil, lime juice and water in a blender.

Top the pistachio chicken with the grilled onions and serve with sauce. AMAZING and a big crowd fave. :)

Our favorite 2 INGREDIENT Main Dish is:
Honey Teriyaki Pork Tenderloin

1 bottle KC Masterpiece Honey Teriyaki Marinade
1 pork tenderloin

Preheat oven to 250 degrees.

Lay out two large pieces of foil cross-wise and place meat in middle. Pour about 1/4-1/2 cup of marinade over meat, covering entire surface of tenderloin.

Wrap foil pieces loosely around meat to secure marinade drippings. You can create "handles" on either end for easy oven removal.

Place in glass dish to prevent spills. Bake 4-5 hours at 250 degrees.

Enjoy!

My recipe is hot dog casserole!

Ingredients are:
1 pack of hot dogs (use your favorite), box of elbow macaroni, 1 can of cream of celery soup, water, relish, and yellow mustard

Boil the elbow macaroni per the instructions on the box. At the same time, cut the hot dogs into circles and brown them in a large skillet. Then, when the hot dogs are browned, add the can of cream of celery soup. Add a can of water after that. Add 2 tbsp of relish (or more if you would like ) and 1 tbsp of mustard to the hot dogs. Mix well and heat until it bubbles. Then, mix the cooked elbow macaroni to skillet. Mix well and cook until the pasta absorbs some of the liquid.

This recipe sounds weird - but it is DELICIOUS, and my kids all love it, and their friends love to eat over on nights when I make it. It tastes even better as leftovers (but we hardly ever have any leftovers). YUM :)

One of my favorite 6 ingredient recipes is for Hashbrown Ham Casserole. The ingredients are: 32 oz. bag of frozen hash browns, 1 can cream of chicken soup, 16 oz. container of sour cream, 2 cups cheddar cheese, 2 cups cubed ham, 1 1/2 cups crushed corn flakes. Mix all ingredients (except for crushed cornflakes) in a large bowl. Transfer to a greased 9x13 baking dish. Top with crushed cornflakes. Bake at 350 degrees for 50-55 minutes until golden brown and bubbly around the edges. Enjoy! This makes a large amount, so sometimes I split the casserole in half, freezing one half and baking the other. Or I bake the casserole in two smaller baking dishes so I can give one to someone who needs a meal, while at the same time feeding my own family.

4. Meanwhile, place the potatoes in a saucepan, cover with cold water, and bring to a simmer.
5. Add 1 teaspoon salt and cook the potatoes until tender, about 15 minutes. Drain, divide among plates, and gently crush with a spoon to crack the skins.

Heat your tortillas and then add the chicken mixture in the tortillas, roll up and put into a baking dish. Pour the heavy cream over the rolled torillas, sprinkle with shredded cheese. Bake at 350 until the cheese is melted and the cream is bubbling, Usually about 15/20 mintues.

My son loves these and the leftovers -if their are any- are better the next day.

What a GREAT giveaway and your recipe sounds delicious also:)! I LOVE easy recipes... with 2 girls around the same ages as Harper and Hollis I know all too well how desperate I am for easy recipes that are quick and doesn't involve a lot of steps! What makes my recipe EVEN better is it's a Crock pot recipe so you can throw it all in and no worries until time for dinner! LOVE IT:)!

Here it is:
Chicken Reuben Casserole
*4-6 boneless, skinless chicken breasts
*32 oz. Sauerkraut (bag or can), drained and rinsed
*1-2 cups Russian Salad dressing (Thousand Island)
*1 TBSP prepared mustard
*1-2 cups shredded Swiss or Monterey Jack cheese

Layer half of the sauerkraut in the bottom of the pot. Pour 1/3 cup dressing over it; place 2 to 3 chicken breasts on top and spread the mustard on chicken. Top with the remaining sauerkraut and chicken breasts; pour another 1/3 cup of dressing over all and reserve the remaining 1/3 cup of dressing for serving.

Cover and cook on low for about 4 hours, or until chicken is cooked through and tender. Sprinkle Swiss cheese and cook until cheese is melted. Serve with reserved dressing.
Serves 4 to 6.

I normally serve this with homemade or boxed mashed potatoes. And sometimes I'll even get some Rye bread and serve the "reuben" over that. Mmmmmmmmmm!

Quiche: For Breakfast, Lunch, or Dinner!

Ingredients: Pie Crust, Eggs, Spinach, Turkey Bacon, Goat Cheese, and Mushrooms

Set oven to 350 degrees. While a ready-made pie crust is coming to room temperature, cook 8 links of turkey bacon and cut/tear into small pieces. Slice 8 ounces of mushrooms and then saute them in the same pan you used for the bacon. Next saute 4 handfuls of fresh spinach in the same pan you had the bacon and mushrooms in. With a fork, poke the bottom of the pie crust a few times and then place the pie crust in the oven for approximately 10-15 minutes. While pie crust is in the oven, beat 8 eggs and add a splash of water and some pepper. Add the bacon, mushrooms, and spinach to the eggs and then mix in 8-12 ounces of goat cheese (you can buy it already crumbled or crumble it yourself). Pour egg mixture into the pie crust after it has been out of the oven for about 5 minutes. Cook the quiche for approximately 45-60 minutes; it is done when a toothpick comes out clean.

I serve it with fruit for breakfast; a green salad for lunch; or oven-roasted potatoes and a green salad for dinner.

6. Mozzarella Cheese 1 1/2 cups

Pull out of oven and add a good (2-3 tbsp of pesto to crust evenly across.)
Top with chopped spinach, feta, tomatoes/mushrooms, and then mozzarella cheese.

Bake for an additional 10 mins or until crust is crispy

My favorite TWO ingredient crock-pot meal!

We always have leftover steak because our eyes are bigger than our stomachs. This recipe turns your leftover steak into an AMAZING second meal!

Ingredients:

- your leftover steak
-1 (or two) cans of Cream of Mushroom soup (depending on how much steak you have)

1. Simply chop your steak into bite size cubes.
2. Pour can(s) of Cream of Mushroom soup into crock-pot and dump in the steak cubes.

Slow cook for 4-6 hours. I let mine cook on medium heat while we were at church and it was perfect by the time we got home.

This recipe makes the steak so tender it falls apart with your fork!

Enjoy!

-2 minced garlic cloves
-juice of 1 lemon
-1/2c chicken broth
-extra virgin olive oil

dredge turkey cutlets in flour, heat olive oil, brown turkey cutlets (3 minutes each side). remove turkey to plate, add minced garlic & freshly squeezed lemon juice (1 lemon) + 1 cup chicken broth (scrape up bottom of pan), serve sauce over turkey.
voila!

(if you want to go crazy & season the flour with salt & pepper & some sage, you should, it will add flavor, i didn't want to have the extra spices count against my ingredient list!).

My favorite meal of all time, eaten only once a year at Christmas, has 6 ingredients! It is Swiss fondue. My family has made it for 20+ years as our main meal at Christmas.

Swiss Fondue:

4 cloves of garlic (rub on pot, then mince)
2 cups of dry white wine
1 lb of gruyere, shredded
1 lb of fontina, shredded
2 oz. of kirsch
1 tablespoon arrowroot

Rub pot with garlic. Warm wine, minced garlic to simmer on stove. Reduce heat to low. Toss cheese with arrowroot and gradually add cheese to wine stirring gradually. Add kirsch when cheese is melted. Add pepper to taste if desired.

Transfer to fondue pots. Serves six.

Buy or make good french bread and cut into cubes to dip into cheese.

Finish off the meal with chocolate fondue.

Remember to kiss someone at the table if your bread falls into the cheese! Try it sometime. It is wonderful!

Easy Pulled Pork BBQ

Ingredients:

3 lbs of boneless pork ribs
1 can beef broth
1 large bottle of barbecue sauce (I LOVE Sweet Baby Rays Original)

Instructions:

Throw the 3 lbs of pork ribs in a crock pot and pour the beef broth over it.

Cook on high for around 4-5 hours or until the meat pulls apart easily.

Use two forks to shred pork. It should pull apart really easily (if not, it's needs to cook longer)

Pour in barbecue sauce and stir.

That's it. Seriously. And it's SO GOOD!! The husband asked me several times if I had bought it at the store. LOL That just goes to show how much confidence as a cook he has in me haha!

You can use it to make sandwiches or make some side items and have it as your main dish. We've done both! It also heats up well for leftovers and my family will hardly ever eat leftovers!

Brie-Prosciutto Panini

This is a fun recipe for a date night after the kids go to sleep. Or you can make it when the kids are up and make the kiddos grilled cheese on the panini maker.

French Bread (or any bread that would work for panini)
Brie
Prosciutto
sun dried tomatoes (in olive oil)
A little bit of butter

This is super easy to put together. Just butter the inside of the bread and I put a little on the outside as well.
Place sun dried tomatoes next, prosciutto and then the Brie Cheese.
Place it on the panini maker until finished.
I slice it in half and then we enjoy it with a side like a salad or some chips!

Taco Croissant
1 lb ground hamburger
1 lb ground turkey
1 packet of taco seasoning (to taste)
1 onion - diced
2 tubes of croissant rolls
2 cups cheese

Brown hamburger & turkey with the onion. Add taco seasoning (do not add water). Stir in cheese. Separate croissant rolls and lay in a cake pan with the big end on the bottom and tip hanging over the edge. Spoon hamburger mixture into the croissant rolls and fold tips over the mixture (it will look like an "O"). Bake according to the croissant roll directions. Top with taco toppings!

My husband and I eat this for dinner, but it would also be great to make and bring along to a cook-out as a side.

Southwest Chicken Ranch Pasta Salad
1 Box Suddenly Salad Ranch and Bacon Salad Mix
1/2 cup mayo
1 chicken breast (cooked and chopped)
1 can Southwest Style corn
1 cup halved cherry tomatoes
1/2 block of pepper jack cheese, cut into 1/2 inch cubes

Cook Chicken and chop
Cook pasta. Rinse with cold water to cool, drain well.
In a small bowl, combine seasoning mix from packey and mayo
In a large bowl, gently toss seasoning mixture, chicken, corn, tomatoes, and cheese until well mixed; stir in cooked pasta.

This is so tastey! I wish I could eat it everyday!

This is an awesome giveaway!! My favorite receipe is creamy chicken spaghetti:

3-4 chicken breasts
1 can rotel
1 can 98% fat free cream of chicken
1 can 98% fat free cream of mushroom
1/2-1 box whole wheat spaghetti noodles (I use thin)
1 bag velvetta shreds

Cook the chicken (save the broth - you might need to add to mixture)and shred. Cook the spaghetti and drain water. In bowl, combine all soups, rotel, shredded chicken, and a handful of velvetta shreds. Mix and add half a can of broth if needed. Salt and Pepper can be added here if needed as well. Pour into a 9x13 glass dish. Top with remaining velvetta shreds. Cook at 350 for 30 minutes or until cheese is fully melted.

Sounds delish! My 6 ingredients are: ground meat (beef or turkey or whatever you prefer), 1 small onion (diced), 1 can of black beans, 1 can of diced tomatoes, sour cream, shredded cheese.

Brown up the meat. Add the onion until tender. (Season with chili powder. Add in black beans (I like to season those with cumin). Add in tomatoes (seasoned wiht garlic salt if you'd like). Simmer. Makes a very tasty chili!

Top with sour cream and shredded cheese! We also sometimes add avocado on top and/or pour the chili over fritos or corn bread for an entire meal in a bowl!

Monterey Chicken
4 boneless skinless chicken breast
2 Tbsp olive oil
4 strips of bacon
1/4 onion sliced in rings
2 Tbsp brown sugar
1/4 cup shredded Monterey Jack Cheese

In a large non-stick skillet, heat oil.
Sprinkle chicken with pepper on both sides. Cook in oil 7-8 minutes per side or until juices run clear. Remove chicken.
Cook bacon in the same skillet the chicken was cooked in, and remove.
Using the same skillet, add sliced onions and brown sugar. You will need to continually stir because the brown sugar will carmelize. Keep cooking onions until they are flimsy.
Place chicken on a baking sheet, and layer it with the cooked bacon, and carmalized onions. Sprinkle with cheese.
Bake @ 350 degrees for 5 minutes.

This recipe comes from my friend Amanda's blog, Torres Tidbits. But I have made it numerous times and it is delicious. Awesome giveaway.
