Chop up onion and bell pepper. Saute with ground beef. Add everything together, except cheese. Pour in casserole dish, top with cheese. We love it in the fall and winter or on a rainy day.<br /><br />6 cups chicken broth<br />1 onion, finely chopped<br />3.5 oz (approx. 3 links) spicy Italian sausage<br />3 large potatoes, washed<br />1 bunch fresh spinach, chopped<br />1/4 cup evaporated milk<br /><br />Remove casing from sausage by cutting a slit up the sausage link and turning the meat into a skillet. Crumble and brown sausage over medium heat. Add chopped onion & cook over medium heat until onion is soft and meat is no longer pink.<br /><br />While meat is cooking, cube the potatoes into 1/2 to 1 inch pieces. Wash and chop the spinach.<br /><br />Place meat in a large pot, add stock and potatoes. Boil until potatoes are cooked through and fork tender. Leftover mashed potatoes (seasoned however you like- I love lots of garlic but whatever you have left from last night's dinner will do just fine!)<br />2. Flour (regular or gluten free)<br />3. Can of baby shrimp, drained<br />4. Seasoning (I use either Old Bay or garlic powder but whatever you have in the pantry and any combination is great)<br /><br />Depending on how many you are making, you flour amounts will vary. But add enough flour to make the mashed potatoes have a firmer consistency. Add seasonings and shrimp too. Mix well.<br /><br />Saute in a little EVOO spray until crispy on both sides and warm throughout. Should only take a few minutes on each side.<br /><br />These are sooo yummy with a big salad or as a side dish. Place cubed chicken in a skillet and cook until done.<br />2. In a separate skillet, saute the diced red peppers and onions until the onions start to turn clear. <br />3. Add the peppers/onion mixture to the chicken.<br />4. Add the block of cream cheese. Allow to melt and stir it all together. <br />5. Spoon some of the mixture into the tortillas, roll up and place in a baking pan. Continue this until all of your mixture has made it into tortillas and the tortillas are into the pan.<br />6. Cover with whipping cream. (Sometimes I add some shredded cheese on top, sOmetimes I don't..your decision :))<br />7. Bake at 350 until cheese starts to bubble and get a little brown on top (usually about 30 minutes!)<br />8. I sometimes will whip up some corn bread or you can eat with fritos or on top of baked potatoes.
